Are you a fan of traditional Thai flavours? The cuisine of Thailand focuses heavily on fish and seafood, which means there are dozens of delicious recipes based on the catch of the day.

Some recipes call for frying, come call for steaming, and others demand more unusual preparations. However, no matter which way you swing it, Thai-style fish dishes are out of this world! Here are some of Thailand’s best seafood recipes to inspire you to cook your most recent catch.

Pan-Fried Salmon in Thai Sauce

Salmon lends itself very well to the spiciness of Thai flavours. This dish takes just 30 minutes to complete, so you can play Aristocrat pokies online while you wait!

Ingredients: Marinade

1/2 cup rice vinegar

1/4 cup honey

4 cloves minced garlic

1 fresh red chili, sliced

1 tablespoon fish sauce

2 tablespoons soy sauce

1 tablespoon minced lemongrass

For the Salmon

2 to 4 salmon fillets

1 to 3 tablespoons oil for frying

Garnish: toasted sesame seeds

To collate the dish, create your marinade by mixing all of the ingredients together and cooking on a medium heat for about 10 minutes. Allow to cool for 5 minutes, then marinate the fish in the mixture for at least half an hour.

Place a frying pan over medium-high heat, allowing it to warm for at least 1 minute before adding the oil. This will prevent the salmon from sticking. Once the pan is hot, add your oil and place the salmon skin-side down to crisp the skin. Cook for at least 2 minutes before turning it over and cooking for a further 2 minutes.

Add the remainder of the marinade during cooking to create a sauce. The salmon is done when it flakes easily with a fork and the flesh looks opaque. Serve immediately, sprinkled with sesame seeds!

Fish Fillets in Banana Leaves

This is another Thai classic – fish fillets marinated in a coconut sauce and cooked in banana leaves.

For the Coconut Marinade:

1 shallot

2 garlic cloves

1 thumb-sized piece galangal/ginger

2 teaspoons coriander

1 handful of basil leaves

2 tablespoons fish sauce

1/2 can coconut milk

2 lime leaves

1 red chili, sliced

1/2 cup lime juice

For the Fish:

2 to 3 fish fillets. You can use salmon, red snapper, cod, or other fish.

1 package banana leaves

Create your marinade by adding all of the marinade ingredients to a food processor and processing until smooth. Add half of the marinade to the fish and let it rest in the refrigerator for at least 15 minutes. When done, cut banana leaves to roughly 1 square foot each and spread on a flat surface.

Place one fish fillet on each leaf, then fold all sides of the leaf over the fish to create a package.  Turn the packages seam-side down and bake on a deep tray for 15 minutes at 180 degrees Celsius. Warm the rest of the sauce in a separate saucepan and pour over the fish before serving. Serve with traditional Thai coconut rice and a sprinkle of fresh basil or coriander. Visit to enjoy!
